Method
Step 1: Prepare Ingredients
Finely chop or grate the garlic, grate the Parmesan, and chop the parsley.
If making garlic butter, mix all ingredients in a bowl until smooth and set aside.
Step 2: Cook the Pasta
Bring salted water to a boil and cook the fettuccine until al dente.
Reserve 1/2 cup of pasta water, then drain the pasta.
Step 3: Cook the Prawns
Heat a large pan over medium heat. Add 1 tbsp butter and 1 tbsp olive oil.
Add half the garlic and sauté briefly.
Add prawns and season with salt, pepper, and half the Cajun seasoning.
Cook for 3 minutes until lightly caramelised. Flip, season again, and cook for another 2 minutes until pink and cooked through.
Remove and set aside.
Step 4: Make the Sauce
In the same pan, add remaining butter and garlic. Sauté for 1 minute.
Add black pepper and heavy cream. Stir well.
Add Parmesan and stir until melted.
Pour in reserved pasta water and simmer for 1 minute. Adjust seasoning to taste.
Step 5: Combine
Add cooked pasta to the sauce and toss well.
Return prawns to the pan and mix gently.
Sprinkle with chopped parsley.

Notes
Do not overcook the prawns - they should remain tender and juicy.
Reserve pasta water to help create a silky, emulsified sauce.
Freshly grated Parmesan melts better and improves texture.
Adjust Cajun seasoning depending on preferred spice level.
